Boiled Peanuts

 


Making Boiled Peanuts.

The subject of boiled peanuts is a big one in my house. My daughter is in California and I have to send her some weekly. To make really good boiled peanuts...you have to have green peanuts...they are not green in color...just fresh from the fields. They have not been dried or blanched or anything. Then you just rinse them in the shell, pick out the bad ones. Then put them in a big pot ...add water.to cover....salt.;.about 1/3 cup to a dutch oven size pot....add a tablespoon of cooking oil....(keeps them from foaming up) and boil over med high heat for about an hour to to and hour and a half. Then let them sit in the boiling brine until they cool some. That is what makes the salt get into them. The fresher the peanut...the faster they will cook. They are done when the peanut is kinda "Mushy" (the kids term) Ha! HOPE THIS HELPS YOU OUT!!! Oh ,,you can also freeze them when they have cooled in zip lock bags. Then just thaw and warm up in a pan as you need them.
